Shrimp Salsa with Yellow Rice

1 small can of sliced black olives drained

1/4 stick of butter

1 large table spoon of minced garlic

2 pounds of wild-caught domestic shrimp, peeled and devein

1/4 teaspoon salt

1 jar (large) salsa

1 roasted red bell pepper, cut into strips (optional)

1 16oz. package of  yellow rice w/saffron

1 cup of white wine



1. Cook Rice according to instructions on package.

2. Heat butter in a large skillet over medium-high heat. Add garlic and sauté until tanned.

3. Once the garlic is tan, add one cup of white wine and add salsa.

4. Bring salsa mixture to a steaming temperature and add shrimp olives and bell pepper.  Cook until shrimp turn pink (about 3-5 minutes).

5. Serve over yellow rice or serve in plate with rice on the side. Serves 4-6.
