Virgil’s Shrimp Cakes

Ingredients:

  • 2 long green onions (finely chopped)
  • 10-12 springs fresh parsley (finely chopped)
  • 10-12 cloves of garlic (finely chopped)
  • 1 fresh cayenne pepper; two, if you’re brave! (finely chopped)
  • 2 lbs. raw Wild Caught Shrimp (clean and cut into 1/4″ pieces)
  • 2 c. all-purpose flour
  • 2 c. cold water
  • 2 tbsp. baking powder
  • salt to taste

Directions:

Mix flour, water, and baking powder together in bowl until all lumps disappear. Add the rest of ingredients and mix thoroughly, then chill in refrigerator until firm. Using a tablespoon, drop mixture into 325 degree deep fryer until cakes are fully cooked (approx. 4-5 minutes). Serves 6. Goes will with soy sauce.
